【摘要】:ThisEuropeanStandardspecifiesthesharpnessandedgeretentionofkniveswhichareproducedforprofessionalanddomesticuseinthepreparationoffoodofallkinds,specificallythoseknivesintendedforhanduse.Poweredbladeinstrumentsofanykindareexcluded.Generallythesetypesofknivesaremanufacturedwithbladesofeitherplainedgedesignorwithedgesincorporatingparticularfeaturestoenhanceoroptimizeaspectsofcuttingability.Thefollowingtwotypesofknifebladearesuitableforthecuttingtest:TypeAedges:Cuttingedgeswhichcanberesharpenedbytheuserandedgeswithapitchgreaterthan1mm;TypeBedges:Cuttingedgeswhicharenotintendedtoberesharpenedonasteel.Whilsttheseknivesarepredominantlymanufacturedwithbladesmadefromvariousgradesofheattreatedsteels,thetestingofknivesofanyconstructionorbladematerialisnotprecludedprovidingthatthetestcriteriaaremet.Theprincipleofthetestingistoreproduceacuttingaction,byforwardandreversestrokes,againstapackofsynthetictestmediumundercontrolledparameters.
